Where discipline meets Italian soul

Dehradun is a city of cafés and cantonments. This is how The Highland brings both together around one table.

Dehradun has always been two cities at once. One is a city of cafés, long mornings and slow conversations. The other is a city of cantonments, early starts and quiet pride. The Highland was imagined as the place where those two cities finally share a table.

The order of an officers’ mess

Everything in the room follows a simple routine. Tables are set the same way each morning. Ovens are lit at the same hour. Bakes are finished by hand before the doors open. It is the kind of order that guests rarely notice, but always feel.

Precision in the kitchen. Generosity at the table.

The table of the Italian countryside

Order alone would make a cold room. So the food leans the other way: generous plates, slow doughs, pizza from a hot oven and coffee that invites a second cup. The idea is borrowed from the countryside table, where nobody is in a hurry to leave.

That balance is the whole story. Thoughtful food, made properly, in a room that feels like it has always been there.
